Homemade Chicago Stuffed Pizza

I realize that there are certain things I took for granted back home since moving to the Bay area. One of these things is Giordano’s pizza. Hands down the best stuffed pizza anywhere. A truckload of cheese, spinach, delicious sauce, and a crusty buttery pie-like crust == heaven. Rumor has it there a some places around the Bay area that have good stuffed pizza, and maybe they do, but I felt that I could make a better pie. After all, I spent a couple years back in high school slinging pizza pies so I know a thing or two. So I hit the grocery store picked up some yeast, all-purpose flour, and some essentials for the sauce. The dough is the hardest part since it requires patience and very exact measurements, in fact, my first batch of dough didn’t rise. Most likely because I didn’t proof the yeast long enough. However, my second attempt was a delicious success. Here are my results.

    Nick, Pizza looks great! I hope that, in true Monday night tennis and Chicago Blackhawk spirit, a few brews were enjoyed with the cuisine.
